Chef  Owner Chester Gerl

GRACIA is the Spanish translation for the word grace. Chester Gerl's vision for Gracia is founded on his deep admiration and reverence for Mexican culture and cuisine.  A palate cultivated by his many years of travels across Mexico, growing up in Long Beach, California and his tenure in Seattle and New York kitchens, Gerl strives to create dishes reflective of his personal experiences. Sourcing pure and honest ingredients, he preserves and honors the history and techniques of traditional Mexican cuisine.  Gerl imports non-GMO, heirloom corn varieties from Oaxaca, Mexico, then nixtamalizes the kernels in house; the result, fresh masa.  Masa, the foundation and heart of his menu, produces distinctly nuanced, earthy flavors that are reflective of season, variety, geography and craft.  Gerl also strives to remain connected with his local community by supporting our local farmers, foragers, and fish mongers.

Gracia is 100% committed to bringing you a safe dining experience. In order to ensure our guest & staff safety, we have implemented the following protocol measures:

  • All surfaces of the restaurant, including our restrooms will be sanitized continually throughout each shift and between each table seating.

  • Hand sanitizer will be provided in several locations for both guests and staff.

  • We kindly ask if your are feeling ill or even slightly under the weather to please not dine with us until you are feeling better; our staff’s health is vital to us being able to open our doors to you. We trust that you are being as careful with our health, as you are with yours.
